I can't believe it's August! Putting August in this post title just felt wrong- the summer is flying by so fast.
But there still one more month and we're planning on enjoying it by kayaking, hiking, biking, and maybe even camping- which is the theme for this month's Cupkins.
For me camping conjured up a picture of heading out in the morning with a snack that travels easily. Something that keeps you fueled while you enjoy the gorgeous scenery around you.
So I chose to make a muffin version of the classic hiking snack- trail mix.
This recipe is really versatile because you can all sorts of fruits, seeds, nuts and grains- just use whatever mix you like best. It's also a great use for the little bits of leftover ingredients you might have hanging around.
Here's how to make them:
1.5 cups of flour
3/4 cup of sugar
1/2 teaspoon of salt
2 teaspoons baking powder
1/3 cup of milk
4 oz unsweetened applesauce
1 cup of trail mix ingredients that you like. I used a combination of:
dried cranberry, dried sour cherry (chopped), dried apricot (chopped), raisins, granola, cashews (chopped), sliced almonds and chocolate chips.
I added 3/4 of a cup to the muffin batter and saved 1/4 of a cup for sprinkling on top of the unbaked muffins.
Bake at 375 degrees for approximately 20 minutes (for large muffins) or until a toothpick inserted into the center comes out clean.
Makes 6 large, 12 regular sized or 24 mini muffins.
